Giulio Urbani has worked for over 10 years with international Chefs, and his experience has been shaped by a multitude of kitchens, from Michelin star restaurants to catering and private events, big hotels and small private venues, which gave him the opportunity to cater to HNW and UHNW clients all over the world.
In order to deepen his knowledge and understanding of the human body in relation to food, Giulio Urbani has completed a MSc in Human Nutrition and Applied Dietetics held by the prestigious Università Politecnica delle Marche.

Rootfood works as a multi-dimensional dietary exploration approached through Gastronomy, which is the ability to transform the satisfaction of a basic human need into a complex form of art; and Nutrition, the science that keeps track of the relationship between what we eat and who we are.
Our Private Chef Service provides a unique style of Nutritional consultancy nurtured by care and attention. Together, we will develop a continuous and trust-based feedback system that regards your gastronomic preferences as well as the organoleptic qualities of natural and high quality food ingredients.
Following the latest trends and discoveries in the field of science, Rootfood is based on the notion that each of our clients is absolutely special and unique, so their diets must be designed according to their body composition, as well as to their relationship with the surrounding environment.
To achieve such a result, we offer the possibility to combine traditional techniques of nutritional assessments with state of the art experimental technologies such as genetic testing, different types of microbiome analysis, saliva hormone testing, and more, which can be easily performed right at your home.
We would like to co-create a holistic gastronomical experience that involves all your senses and makes you feel inspired to redesign your life, so our relationship starts with an informal interview, aimed at establishing your current tastes and food preferences, health status, general goals and future objectives.

Depending on your case and desires, the meeting is followed by a clinical anamnesis combined with a number of specific tests in order to help us determine eventual food intolerances, nutritional deficiencies, and different insights on how your current choices are affecting your general well-being (e.g. levels of stress and/or inflammation). Needless to say, the depth and width of our discussion about the science behind our work will entirely depend on your will and curiosity.
Once the assessment phase is completed, and the results have been properly analyzed, our job consists of stepping into your kitchen and crafting a daily choice of dishes. Occasionally and gradually, we introduce alternatives and variations to your habitual set of preferences to foster new, tasty, playful and potentially healthier habits.
Our suggestions will strive to embrace different styles of cuisines, and they will be mostly based on seasonal and local produce, containing the least possible amount of animal sources.
Even though we do not classify as a strictly plant based service, unless explicitly agreed with the client, we believe this to be the best possible choice for both the consumer and the environment as a whole.
One key standpoint of our work is to avoid rigid unchangeable structures, so each case is always carefully monitored and constantly adjusted as needed.
